Description
David Castro Hussong's Roma Norte 'gourmet cantina' in a restored 1914 mansion-courtyard, vermouth, serious food. Chef David Castro Hussong (Fauna, La Mari) turned the 1914 Casa Balta into a 'gourmet cantina' with a stone courtyard shaded by old-growth trees, ivy-wrapped columns, and a wrap-around terrace. Vermouth on tap, a long list of aperitivos, and creative northern Mexican small plates-empanadas norteñas with chicharrón prensado and smoked fish, zesty octopus stew topped with crunchy menudo. El Tigre Silencioso is listed in the 2026 Michelin Guide, marking Michelin recognition for chef David Castro Hussong's first Mexico City venture after building his reputation in Baja California's Valle de Guadalupe wine country with Fauna and La Mari.
